<li>2 slices extra-lean turkey bacon</li>
<li>3 whole eggs</li>
<li>¼ 12" thin pizza crust</li>
<li>½ cup fat-free mozzarella or cheddar cheese</li>
<li>¼ small onion, diced</li>
<li>½ tomato, diced</li>
<li> Nonstick cooking spray</li>
<li> Hot sauce (optional)</li>
<li> Salt and pepper to taste</li>

<h2 class="block-title"><span>Directions</span></h2>
<li>If making with turkey bacon, place bacon between two paper towels on a plate and microwave for one minute. Flip bacon over while keeping it in the paper towels. Remove the top paper towel and replace it with a fresh one, and microwave for another minute. Cut into 1 inch pieces. If making with turkey sausage, cook according to package instructions then cut into pieces small pieces.</li>
<li>Saute tomatoes and onions in a skillet coated with nonstick cooking spray. Add meat to pan.</li>
<li>Beat eggs in a bowl, season with salt and pepper and add to the skillet and scramble. Remove from heat once cooked.</li>
<li>Heat pizza crust in a toaster oven for a few minutes, then top with eggs, cheese and, if desired, hot sauce.</li>
